And it's simple enough to get service for a month and use an old unlocked phone or swap sim cards in your regular unlocked phone. I had 2 incoming phone calls during my cruise that I didn't answer.

I would never trust using cellular data at sea (meaning 12+ miles from land). I have tmobile but I have not used it on a cruise.
